Preheat oven to 425 °F.

Place a little potato on the bowl of a wooden spoon. Using the spoon as a guide, slice the potato about 5 mm apart as many times as possible. Place on parchment lined baking sheet.

In small saucepan, melt butter and orange juice. Pour over potatoes and coat thoroughly.

Bake for 10 minutes, then flip. Bake another 10 minutes, and flip once more. Bake another five minutes and then remove from oven.

Open up the potatoes and fill with stilton, zest, rosemary and walnuts. Bake another five minutes. Enjoy.
