Ingredients

  • 1.5 lbs Little Potatoes
  • 10 oz Ukranian or Polish sausages, sliced
  • 1 large red pepper, diced
  • 1 bunch asparagus, each piece cut into three or four pieces
  • 2 Tbsp olive oil
  • 1 tsp thyme
  • (To taste) kosher salt and freshly ground pepper

Instructions

  • Step 1

    Preheat oven to 425 °F.

  • Step 2

    Place the little potatoes, peppers and asparagus on a large rimmed baking sheet. Sprinkle on the oil, thyme and salt and pepper and toss. Add the sausage.

  • Step 3

    Bake for 30 minutes, or until potatoes are tender and starting to brown. Serve immediately.
