- 1/2 lb extra lean ground turkey
- 2 Tbsp butter
- 1/2 onion, diced
- 1/4 red pepper, chopped
- 1/2 yellow pepper, chopped
- 1/4 orange pepper, chopped
- 2 cloves garlic, minced
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp dried thyme
- 4 large eggs
- (For garnish) fresh oregano and chives, if desired

Step 1
Bring a large pot of salted water and cubed Something Blue Little Potatoes to a boil. Cook until fork-tender, about 5 to 8 minutes. Drain, run under cool water, and set aside.

Add ground turkey to large frying pan over medium-high heat. Cook until browned, about 8 to 10 minutes. Drain excess grease if necessary and season with salt and pepper. Remove meat and return pan to stove-top.

Melt butter. Once bubbling, stir in potatoes, salt, and pepper. Cook, stirring occasionally, until browned, about 15 to 20 minutes. Remove from pan.

Stir in onion. Cook for a few minutes, or until translucent. Add peppers. Cook for another 4 to 5 minutes. Stir in garlic and cook until aromatic.

Return potatoes and turkey to pan. Season with salt, pepper, paprika, oregano, and thyme. Stir well.

Preheat oven to 375 °F.

Create three wells. Crack an egg into each well. Transfer immediately to oven and cook for five minutes, or until egg whites are solid but egg yolk is soft.
