    Preheat oven to 425 °F.

    Place turkey on a large rimmed baking sheet (around 9" x 13" will work). Drizzle with one tablespoon of the olive oil and sprinkle with half the salt and half the pepper. Place in oven and bake for 15 minutes.

    Toss potatoes, Brussels sprouts, rosemary, garlic, remaining one tablespoon of olive oil, and remaining salt and pepper together. Add to turkey on baking sheet and return to oven, cooking for 20 to 25 more minutes or until turkey is cooked through (reaches 165 °F) and vegetables are cooked, browned and starting to crisp up.
