Ingredients
- 4 oz white miso
- 8 inches lemongrass, cut into 2-inch pieces (smash with the back of your knife to release the flavor)
- 2 bird's eye chili, sliced (or to taste)
- 1 (3-inch piece) ginger, peeled and sliced into long strips
- 1 (2-inch piece) turmeric, peeled and cut
- 1.5 lbs Little Potatoes

Step 1
Combine all but the potatoes in a large pot. Add the potatoes and cook on a low simmer for 20 minutes until fork tender. Stir occasionally.

Remove large pieces of ginger, turmeric, and lemongrass before serving.
