Lightened-up scalloped potatoes with ham—easy to make and delicious!
Equipment
- Large saucepan
 - 9" x 13" casserole dish
 
- 1/4 cup butter
 - 1/4 cup flour
 - 1 tsp salt
 - 1 tsp dried parsley
 - 1 1/4 cup low-fat milk
 - 1 cup chicken broth
 - 1.5 lbs Little Potatoes, thinly sliced
 - 2 cups ham, cooked and diced
 - 1 cup low-fat mozzarella cheese (or cheese of choice), shredded
 
Instructions

Step 1
In a large saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Cook one minute.

Step 2
Stir in salt and parsley.

Step 3
Add milk and chicken broth and continue cooking over medium heat, whisking often, until thickened.

Step 4
Preheat oven to 375°F and lightly grease a 9" x 13" casserole dish.

Step 5
Combine sliced potatoes and ham in casserole dish and cover evenly with sauce.

Step 6
Sprinkle with cheese and bake for 40 to 45 minutes until potatoes are tender and cheese is golden brown. Let sit for 5 to 10 minutes before serving.
