This healthy potato salad is a comfort food that’s full of tomatoes, olives, feta, and fragrant herbs. Served warm, it’s the perfect fall dish.

- Medium skillet
 
- 1 Tbsp oregano
 - 1/2 onion, thinly sliced
 - 2 cloves garlic, chopped
 - 1 Tbsp olive oil
 - 1.5 lbs Little Potatoes
 - 1/4 cup Kalamata olives
 - 1 tin plum tomatoes
 - 1/4 cup feta cheese
 
Instructions

Step 1
Sauté the oregano, onion and garlic in the olive oil on medium-high heat for 3 to 4 minutes.

Step 2
Add the potatoes, tomatoes, and olives. Simmer for 25 to 30 minutes until the potatoes are tender.

Step 3
Serve with chunks of feta cheese.
