Potatoes are roasted with olive oil and za’atar in this easy and flavorful vegetarian side dish recipe.

- Baking sheet
 - Aluminum foil
 - Small bowl
 
- 24 Little Potatoes
 - 2 Tbsp olive oil
 - 2 Tbsp za'atar spice
 - 1 tsp salt
 - 1/2 tsp pepper
 - (For garnish) minced scallions
 
Instructions

Step 1
Pre-heat oven to 450°F and line a baking sheet with foil.

Step 2
In a small bowl, toss Little Potatoes with olive oil, za’atar, salt and pepper to coat.

Step 3
Spread on baking sheet in a single layer and roast until crispy, about 20 minutes. Sprinkle with scallions to serve if you wish.
