Sheet Pan Little Potatoes and Sausages

When dinner needs to happen fast, this is where to start.

This easy Little Potatoes pantry dinner uses simple ingredients, one pan, and minimal prep—making it perfect for nights when you don’t have a plan (or the energy to make one). It’s flexible, family-friendly, and designed to work with what you already have on hand.

Ingredients

  • 1 lb Little Potatoes
  • Sausage (or protein of choice, try Italian sausage, chicken thighs, or favorite plant-based protein)
  • Any vegetables you have on hand (2 to 3 cups total). Good options include:
    • bell peppers
    • green beans
    • broccoli
    • zucchini
    • carrots
    • onions
    • Brussels sprouts
  • Oil (olive oil or other vegetable oil)
  • Seasoning (Italian seasoning, garlic powder, paprika, or a spice blend you love.)

How to Make It

  1. Heat the oven to 400°F. Line a sheet pan if you want easy cleanup.

  2. Add everything to the pan: Little Potatoes, chopped veggies, and sausage or protein.

  3. Drizzle with oil and sprinkle with seasoning. Toss everything until coated.

  4. Spread into a single layer so everything roasts evenly.

  5. Roast for about 30 minutes, stirring once if needed, until potatoes are tender and the protein is cooked through.

  6. Serve as-is, or finish with a squeeze of lemon, grated cheese, or a spoonful of sauce if you like.
