Ingredients
- 1 lb Little Potatoes
- Sausage (or protein of choice, try Italian sausage, chicken thighs, or favorite plant-based protein)
- Any vegetables you have on hand (2 to 3 cups total). Good options include:
- bell peppers
- green beans
- broccoli
- zucchini
- carrots
- onions
- Brussels sprouts
- Oil (olive oil or other vegetable oil)
- Seasoning (Italian seasoning, garlic powder, paprika, or a spice blend you love.)
How to Make It

Heat the oven to 400°F. Line a sheet pan if you want easy cleanup.
