Add a Little twist to your standard roasted potato dish with a generous squeeze of orange and beautiful, Little Purely Purples™.
Tip: For even more flavor and to make the potatoes extra crispy, cut in half before tossing in the seasoning and roasting.
Equipment
- Large pot
 - Parchment paper
 - Baking sheet
 
Potatoes:
- 1.5 lbs Little Potatoes (this recipe uses Little Purely Purples™, but you can use any kind you like)
 - 1 tsp salt (for boiling)
 - 2 Tbsp olive oil
 - 2 cloves garlic, grated
 - 1/4 tsp ground coriander
 - 1/4 tsp ground cardamom
 - 1/2 tsp salt
 - 1/4 tsp pepper
 - 1 orange, zested and juiced
 
Garnish:
- 2 Tbsp cilantro, chopped
 - 1 orange, zested
 
Instructions

Step 1
Preheat oven to 400° F.
 - 
                                        
Step 2
Add potatoes to a large pot and cover with water. Add salt and bring to a boil and cook for 15 minutes or until potatoes are fork tender.

Step 3
In the meantime, in a large bowl, combine all the remaining ingredients except the orange juice.

Step 4
Toss the potatoes in the seasoning mix and place on a parchment lined baking sheet and bake for 20 minutes. Sprinkle with orange juice, chopped. Cilantro, and additional zest before serving.
