Add some sweetness and flair to a simple dish of pan-fried potatoes by tossing in some pineapple, ham, and fresh herbs.
Equipment
- Frying pan
 
- 1.5 lbs Little Potatoes, quartered
 - 3 Tbsp olive oil
 - 1 1/2 cups ham, cut into 1/2-inch cubes
 - 1 cup pineapple, cut into small 1/2-inch triangles
 - 2 Tbsp fresh parsley, chopped
 
Instructions

Step 1
Heat frying pan over medium heat. Add two tablespoons of oil and fry potatoes for 15 minutes or until crispy and cooked through.

Step 2
While potatoes are cooking, heat another frying pan over medium heat. Add remaining oil and fry ham and pineapple together until pineapple begins to caramelize and ham is golden, about 6 to 8 minutes.

Step 3
Remove both pans from heat and toss potatoes, ham, pineapple, salt, and parsley together in a bowl.

Step 4
Serve and garnish with more fresh parsley if desired.
