These extremely easy Red Pesto Potatoes make an excellent side dish for many entrees. With basically five ingredients and two being a garnish, you will have this amazingly flavorful dish on the table in no time.

Equipment
- Large pot
 
- 1.5 lbs Little Potatoes
 - 1 Tbsp butter
 - 1/3 cup red pesto, store bought or homemade
 - 1/4 cup Parmesan cheese, grated
 - (For garnish) parsley
 
Instructions

Step 1
Heat potatoes and water in a large pot and boil until fork tender, about 15 minutes.

Step 2
Drain and then place back in the pot and break half the potatoes in half with a large spoon.
 - 
                                        
Step 3
Toss the potatoes with the butter and then the red pesto.
 - 
                                        
Step 4
Serve in a serving dish sprinkled with Parmesan cheese and parsley if using.
