  • 2 Tbsp butter
  • 3 mild Italian sausages, sliced
  • 3 cups Little Potatoes, sliced in 1/2-inch pieces
  • 4 cups kale, chopped
  • 3 cloves garlic, chopped
  • 1/2 cup red wine
  • 1/4 cup water
  • 1 lemon, zest and juice
  • 3/4 cup Parmesan, grated
  • (To taste) salt and ground pepper

Instructions

  • Step 1

    In a large pan, melt the butter and fry the sausages and little potatoes for five minutes or until they start to brown on all sides.

  • Step 2

    Add the garlic and red wine. Cook five minutes.

  • Step 3

    Add the kale and water. Season with salt and pepper, cover and cook for eight minutes.

  • Step 4

    Add lemon, Parmesan and more salt and pepper if desired. Serve.
