Another easy spin on basic mashed potatoes. Add some leeks and chorizo to spice it up a bit and serve alongside your favorite main dishes!
Equipment
- Large pot
- Frying pan
- Small saucepan
- Potato masher
Ingredients
- 1.5 lbs Little Potatoes
- 1 tsp salt
- 1/2 cup milk
- 2 Tbsp butter
- (For seasoning) salt and pepper
- 2 chorizo sausages, skins removed
- 1 leek, cleaned and chopped
- 1 Tbsp olive oil
Instructions

Step 1
Add potatoes to a large pot and cover with water. Add salt and bring to a boil for 15 minutes or until potatoes are tender.

In a frying pan over medium heat, add oil. Cook sausage for five minutes using a spoon to break up and crumble.

Add leeks and cook for an additional five minutes. Strain any excess fat.

Meanwhile, place milk and butter in a small sauce pot and heat over low heat until butter is melted and milk is steaming.

Once potatoes are cooked, strain and transfer to a medium mixing bowl.

Using a potato masher, smash potatoes with milk and butter mixture and season with salt and pepper. Stir in chorizo and leek mixture.
