Roast some little potatoes in the oven with cheddar cheese to make these delicious home fries. Only needs five minutes of prep!
Ingredients

- 1.5 lbs little potatoes
- 2 1/2 Tbsp olive oil
- (to taste) salt and pepper
- 1 cup cheddar cheese, lightly packed
- 2 green onions, chopped
Instructions

Preheat oven to 400° F.
Slice Little potatoes into quarters and place on a rimmed baking sheet.

Drizzle with olive oil, then season with salt and pepper. Toss to coat evenly.

Bake in the oven for 35 to 40 minutes, tossing the potatoes after 20 minutes or when they start to brown.

Gather the potatoes into the middle of the pan and sprinkle with cheddar cheese. Return to the oven and bake for 2 to 3 minutes until the cheese is melted.

Transfer to a serving platter and sprinkle on green onions. Serve immediately.
