Elevate a simple dish by tossing them with a delicious pesto! These Boiled Cilantro Lime Potatoes are fantastic for any occasion.

 - Large saucepan
 - Bowl
 
- 3/4 cup lightly packed cilantro, chopped
 - 2 Tbsp almonds, slivered and toasted
 - 1 Tbsp jalapeño pepper, minced
 - 1 clove garlic, grated
 - 1/4 tsp salt
 - 1/4 tsp ground pepper
 - 3 Tbsp extra virgin olive oil
 - 2 tsp fresh lime juice
 - 1.5 lbs Little Potatoes
 
Instructions

Step 1
In the bowl of a food processor, combine the cilantro, almonds, jalapeño, garlic, salt and pepper. Pulse until combined.

Step 2
While the food processor is running, slowly pour in the olive oil and lime juice. Process until smooth, scraping down the sides as needed.

Step 3
Place the potatoes in a large saucepan and cover with cold water by one inch. Bring to a boil, reduce to medium-high and cook until the potatoes are tender when pierced with a fork, about 15 minutes. Take care care not to overcook so that the potatoes do not start to fall apart. Drain.

Step 4
Transfer the potatoes to a bowl and toss with the pesto. Serve.
