Ingredients

  • 2 pork tenderloins
  • 1.5 lbs Little Potatoes
  • 2 Tbsp butter
  • 2 Honey Crisp apples, diced into 1/2-inch cubes
  • 3 Tbsp brown sugar
  • 1 Tbsp olive oil
  • 1 1/2 Tbsp kosher salt, divided
  • 1 1/2 Tbsp pepper, divided

Instructions

  • Step 1

    Preheat oven to 400 °F.

  • Step 2

    Season pork with two tablespoons salt and pepper to create a salt and pepper crust.

  • Step 3

    Place potatoes on a single layer on a plate and microwave for five minutes.

  • Step 4

    In a hot skillet, add butter and pork. Sear on all sides.

  • Step 5

    In a bowl, mix potatoes, apples, brown sugar, olive oil, and 1/2 tablespoon salt and pepper. Place all ingredients on a parchment-lined baking sheet.

    Bake 20 to 25 minutes or until pork reaches an internal temperature of 145 °F.
