  • Slotted spatula

Ingredients

  • 1.5 lbs Little Potatoes
  • (To grease pan) cooking spray
  • (To coat) cooking oil
  • (To taste) salt and pepper
  • (To taste) pepperoni sticks
  • (To taste) sliced cheddar cheese singles
  • (To taste) sour cream

Instructions

  • Step 1

    Place potatoes in a pot of salted boiling water, and simmer for 15 minutes. Preheat oven to 450 °F. Drain potatoes and place on a baking tray sprayed with cooking spray. Let the potatoes cool enough to handle and then smash with a slotted spatula. Drizzle with olive oil and season with salt and pepper. Bake for 15 minutes or until crispy.

  • Step 2

    Meanwhile take a pepperoni stick and roll a cheddar cheese slice around the pepperoni. Slice in half-inch slices.

  • Step 3

    Top each potato with sour cream, a pepperoni slice, and a cheese slice. Serve warm.
