A slow cooker soup made with broccoli, little potatoes, onions, and garlic. With just five ingredients you can be enjoying this simple recipe for dinner.
Notes:
For a creamy soup, remove half of the potatoes and broth before adding the broccoli and purée in a food processor or blender designed for hot foods. Alternatively, use an immersion blender to puree some of the potatoes in the slow cooker. Then add the broccoli and finish cooking.

Ingredients
- 4 cups Little Potatoes
- 1/2 cup onion, finely chopped
- 1 tsp garlic, minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 cups vegetable broth
- 3 cups broccoli florets

Step 1
Place Little Potatoes, onion, garlic, salt, and pepper in a 3 to 4 quart slow cooker. Pour in broth and stir to combine.

Cover and cook on low for 6 to 8 hours, or high for 3 to 4 hours, just until potatoes are tender.

Stir in broccoli, cover, and cook another 30 minutes or low on 15 minutes on high, until broccoli reaches desired tenderness. Serve.
