Grease a 3 to 4 quart slow cooker with non-stick spray. Place Little Potatoes in the slow cooker.

In a medium bowl, whisk together broth, cream, corn starch, garlic, parsley, thyme and salt until combined.

Stir in Parmesan and Gouda cheeses and pour over potatoes in slow cooker. Stir until potatoes are coated.

Cover and cook on low for 3 to 4 hours, stirring every 1 1/2 to 2 hours to prevent burning. Stir in fresh chives and serve.
