Instructions

  • Step 1

    Parboil the potatoes in a pot of boiling water for 10 minutes. Drain, reserving one tablespoon of the potato water.

    Preheat oven to 350 °F.

    In a baking dish large enough to line the potatoes in one layer, grease the bottom and sides with one tablespoon oil. Add the potatoes and the potato water to the dish then drizzle with another tablespoon of oil. Roll the potatoes around to coat.

    Sprinkle the za’atar seasoning over top and cover.

  • Step 5

    Bake for 40 to 45 minutes, rotating the spuds halfway through. Remove the lid for the last 10 or 15 minutes until they’re golden brown. Garnish with fresh lemon juice and fresh coriander. Serve immediately. Note: Za’atar is a Middle Eastern spice blend you can get from your local store, or make your own!
