This Breakfast in a Mug recipe is so quick to whip up on a busy morning! You can cook it in the microwave or bake it in a baking dish. Easy and healthy!
Equipment
- large mugs
 
- 1 package any microwave ready little potatoes
 - 4 eggs
 - 1/3 cup ham, cooked and diced
 - 4 Tbsp cheddar cheese, shredded
 - 2 Tbsp milk
 - 2 green onions, sliced
 - Pinch salt
 
Instructions

Step 1
Cook Microwave Ready Little Potatoes according to package directions. Stir in seasoning and allow to cool slightly.

Step 2
Chop up six Little potatoes and separate between two lightly greased mugs (around 14 to 16 oz).

Step 3
Whisk eggs slightly and split between mugs, along with ham, cheese, milk, onion, and salt.

Step 4
Microwave separately on high in 40 second intervals, stirring the first two times (while there is still uncooked egg in the mug) until eggs are completely set.

Step 5
Serve!
